Cheese and Spring Salad on Three Malt and Sunflower Bloomer
This recipe was created by Delvin Pitt of Oldfields as part of his entry for The British Sandwich Desiger of the Year Award 2004 and won him the Wyke Farms Low Fat Cheese Sandwich Designer of the Year Award.
Ingredients
- 2 x slices Three Malt & Sunflower Bloomer Bread
- 6g reduced fat mayonnaise
- 40g Spring salad*
- 12g chopped strawberries
- 12g Red Chard and lambs lettuce
- 2g Strips of beetroot
- 40g Wyke Farms' LesKol low fat cheese
- 20g Carrot shavings
- 20g Courgette shavings
Method
- Combine all the ingredients for the salad mix.
- Spread the mayonnaise on the bread, place the salad mix on the base slice and the strawberries on top of this.
- Place the red chard, lambs lettuce and beetroot on the strawberries and then the LesKol cheese on top of this followed by the carrots and then the courgettes.
- Top with second slice of bread, cut and serve.
*Spring salad ingredients
- 70g white cabbage – thinly shredded
- 20g red apples – chopped
- 20g green; apples – chopped
- 30g grated LesKol low fat cheese
- 20g seedless red grapes
- 20g seedless green grapes
- 30g chopped celery
- 30g sliced radish
- 0.6g oven roasted pumpkin seeds
- 0.3g roasted sunflower seeds
- 50g reduced fat mayonnaise
- 50g plain yoghurt
- 0.5g cracked black pepper
- 0.5g celery salt
