The Italian Job
Leskol Cheese served with a fresh chive pesto (made specially using extra virgin olive oil, chives, vegetarian Parmesan style cheese and a hint of basil), slow roast tomatoes and seasonal Italian salad leaves on malted grain bread.
Ingredients
- 2 slices of thick cut malted bread
- 15g of fresh chive pesto
- 2 slices of Wyke Farms Leskol cheese
- fresh chives
- 15g slow roast tomatoes
- 20g of Italian salad
leaves (rocket, radichio and lollo)
Method
- Butter two slices of fresh extra thick malted bread.
- Spread 15g of fresh chive pesto onto the base.
- Cover with two slices of Wyke Farms Leskol cheese, placing a layer of fresh chives between them for visual effect.
- Top with 15g slow roast tomatoes and 20g of Italian salad leaves (rocket, radichio and lollo)
