The Italian Job

Leskol Cheese served with a fresh chive pesto (made specially using extra virgin olive oil, chives, vegetarian Parmesan style cheese and a hint of basil), slow roast tomatoes and seasonal Italian salad leaves on malted grain bread.

Ingredients

2 slices of thick cut malted bread
15g of fresh chive pesto
2 slices of Wyke Farms Leskol cheese
fresh chives
15g slow roast tomatoes
20g of Italian salad leaves (rocket, radichio and lollo)

Method

Butter two slices of fresh extra thick malted bread.
Spread 15g of fresh chive pesto onto the base.
Cover with two slices of Wyke Farms Leskol cheese, placing a layer of fresh chives between them for visual effect.
Top with 15g slow roast tomatoes and 20g of Italian salad leaves (rocket, radichio and lollo)
