Lite & Tasty Cheese Panini

Ingredients

• 90g Low Fat Red Leicester, grated
• 90g Low Fat Mozzarella, grated
• 200g Extra Light Mayonnaise
• 6 Cherry Tomatoes
• 5g Basil Leaves (chopped)
• 2 Panini Rolls

Method

Slice rolls in two.

Combine mayonnaise with basil and cheese and spread over the base of both rolls then halve the cherry tomatoes and place randomly over the cheese.

Place tops on rolls and bake.
