The Mango and Mint Salsa Cheese Sandwich
Created by British Sandwich Designer of the Year 2004 Mark Evans, from the Sandwich Factory, this recipe helped to win him the award.
Ingredients
- 30g 20mm diced Mango
- 1g fresh lime juice
- 1g rice vinegar
- 10g diced 20mm vine tomato
- 6g diced 5mm red onion
- 2g sliced fresh mint leaves
- 10g sunblushed tomato chutney
- 20g Crème Fraiche
- 2 slices tomato and Chipotle chilli bread
- 60g slice Wyke Farms' LesKol low fat cheese
Method
- Spread 10g of the Crème Fraiche on either side of the tomato and Chipotle chilli bread.
- Place 30g of Mango and Mint Salsa mix on the crème fraiche
- Then place a 60g slice of Wyke Farms' LesKol low fat cheese on top.
- Place another 30g of Mango and Mint Salsa mix on top of the cheese
- Top with the remaining slice of bread.
- Cut and serve.
