Neil Wilkinson's Picnic Special

A sweet and sharp offering that highlights the delicious flavour of the cheese and offers a hearty mayonnaise free "picnic perfect" bite.

Neil Wilkinson from the Sandwich Factory in Atherstone created the "Picnic Special " as his entry in the 2006 Sandwich Designer of the Year Awards category "H&B Butler’s Secret Cheese Sandwich Designer of the Year."

Congratulations to Neil on being a finalist. Here's how he did it and how you can do it too.

Ingredients

• Butlers Special Reserve Cheddar Cheese
  
• Multi Seed Batch Bread
  
• Butter
  
• Medium Rare Roast Beef
  
• Special Reserve Piccalilli
  
• Vine Ripened Tomatoes
  
• Mustard leaf Lettuce

Method

1. Butter Bread
   
2. Spread Piccalilli
   
3. Add Roast Beef
   
4. Add Special Reserve Cheddar Shavings
   
5. Add Vine Ripened Tomatoes
   
6. Finish with Mustard Leaf Lettuce

Asked what makes his creation stand out from the competition Neil said:

"A really Special sandwich, the quality of all ingredients coming through but bringing forward the extra special flavour of the Cheddar, A Cheesy, Meaty sweet and slightly sharp offering a nice mayonnaise free hearty summer eat perfect for sitting in the park."
