Laura Anthony's Greek Holiday

A soft white pitta bread filled with lemon, garlic and rosemary marinated chargrilled chicken pieces, a yoghurt and cucumber dressing minted cabbage sliced vine ripened tomatoes and Mediterranean stuffing.

Laura Anthony of Greencore Sandwiches in Worksop created the "Greek Holiday" as her entry in the 2006 Sandwich Designer of the Year Awards category "Mr Crumb Stuffing Sandwich Designer of the Year."

Open and butter the pitta bread then generously fill with the other ingredients

Asked what makes her creation stand out from the competition Laura said:

"A commercial twist on a Greek classic ‘souvlaki’? Pitta breads are the unsung heroes of the bread world - low fat - low GI This sandwich is even better with the marinated chicken hot off the char-grill. The subtle lemon, garlic & Rosemary chicken marinade compliments the yoghurt and cucumber dressing with a hint of garlic, the minted cabbage julienne and slices of vine ripened tomatoes add coolness and a crunchy texture the Mediterranean stuffing adds a contrasting vibrancy and a good flavour of tomato and black olive."
