Neil Wilkinson's Mediterranean Chicken Wrap
A light and fresh tasting alternative with tomato and black olive glazed chicken complimented by Mr. Crumb Mediterranean Stuffing, cherry tomatoes, red onion, Italian leaf lettuce and aioli.
Neil Wilkinson of the Sandwich Factory in Atherstone created the "Mediterranean Chicken Wrap" as his entry in the 2006 Sandwich Designer of the Year Awards category "Mr Crumb Stuffing Sandwich Designer of the Year."

Ingredients
- Mr Crumb Mediterranean Stuffing
- Tomato Wrap
- Butter
- Tomato and Black Olive Glazed Chicken
- Cherry Tomatoes
- Sliced Red Onions
- Italian Leaf Lettuce
- Aiolli
Method
- Butter Tomato Wrap
- Spread on Aiolli
- Add sliced Chicken
- Sprinkle with Mr Crumb Mediterranean Stuffing
- Add Onion and Tomatoes
- Finish with crisp Italian Leaf Lettuce
Asked what makes his creation stand out from the competition Neil said:
"This really is a taste of the Mediterranean, it has it all. it’s light al fresco presence is full of sunny flavours and textures with the fresh moistness of the stuffing really making its name." Back to top
