Chantelle Ludski's At The Ritz

As the name suggests, this is an indulgent sandwich packed full of prawns and salmon with organic egg mayonnaise and complimented by the flavours of lemon, capers and black pepper all served on granary bread

Chantelle Ludski of Fresh! Naturally Organic in Wembley created the "At The Ritz" as her entry in the 2006 Sandwich Designer of the Year Awards category "Royal Greenland Prawn Sandwich Designer of the Year."

Ingredients

Method

  1. Spread sunflower spread on both slices.
  2. Put egg mayonnaise on one slice
  3. Top with Royal Greenland Prawn, lemon zest and smoked salmon and capers
  4. Add a squeeze of lemon juice and black pepper.
  5. Close cut and enjoy!
