Sarah Fielder's Jumbo Prawn with Sunblushed Pepper & Chilli Dressing with Spinach on Olive & Pepper Bread

An eye-catching and mouthwatering combination of jumbo prawns, with peppers and spinich in a sunblushed pepper and chilli dressing all served on olive and pepper bread.

Sarah Fielder of Buckingham Foods in Milton Keynes created the "Jumbo Prawn with Sunblushed Pepper & Chilli Dressing, with spinach on olive & pepper bread" as her entry in the 2006 Sandwich Designer of the Year Awards category "Royal Greenland Prawn Sandwich Designer of the Year."

Congratulations to Sarah on being a finalist. Here's how she did it and how you can do it too.

Ingredients

Method

  1. Lightly spread butter onto the bread
  2. Mix the pepper puree, crème fraiche, mayonnaise & chilli together and spread the dressing on to one slice of the bread.
  3. On top of the dressing distribute the prawns evenly
  4. Sprinkle the diced peppers on top of the prawns
  5. Place the spinach on top of the peppers and close with the other slice of bread.

Asked what makes her creation stand out from the competition Sarah said:

"This unique sandwich would really spice up the prawn sandwich market. It offers something that not only looks visually pleasing, but something which offers an amazing combination of flavors in an unusual way. The main influences of this sandwich have been taken from Mediterranean cuisine."
