Steve Davey's Dill Salmon and Stuffing Sandwich

Steve Davey of the Foodservice Centre in Cheddar created the "Dill Salmon and Stuffing Sandwich" as his entry in the 2006 Sandwich Designer of the Year Awards category "Mr Crumb Stuffing Sandwich Designer of the Year."

Congratulations to Steve on being a finalist. Here's how he did it and how you can do it too.

Ingredients

Method

  1. Apply spread to both sides of the bread
  2. Distribute the spinach leaves over the bottom slice of bread.
  3. Lay the salmon over the leaves.
  4. Spread the stuffing over the salmon.
  5. Place on the top slice of bread.

Asked what makes his creation stand out from the competition Steve said:

"I believe that this product deserves recognition in the competition due to its innovation of replacing the traditional meat accompaniment to stuffing with fish. The delicately marinated salmon blends perfectly with the horseradish and mustard flavoured stuffing; the texture of the soft salmon, the breaded stuffing and the slightly crunchy spinach leaves actually works very well – repeat purchases ahead!"
