Thai Fishcake and Chilli Sauce Sandwich
Atlantic prawns and flaked cod in a rich, creamy Taiwanese sauce with crisp Oriental leaves.
This sandwich was created by Neil Wilkinson, from The Sandwich Factory at Athestone in Warwickshire as his entry for the Faroe Seafood Prawn Sandwich of the Year Award 2005 in which he was a finalist.
Ingredients
- Prawn and cod mix consisting
- Faroe 200/300 prawns
- Fresh flaked cooked cod
- Thai seafood sauce consisting
- Red chilli puree
- Garlic puree
- Lemon grass paste
- Thai fish sauce (Nam Pla)
- Coconut milk
- Ultra sperse
- Ground black pepper
- Mixed Oriental leaf
- Butter
- Cracked black pepper
- 16 slice oatmeal bread
Method
- Butter bread,
- Mix prawn with cooked cod.
- Mix sauce ingredients together.
- Spread sauce onto bread.
- Place fish mix on sauce.
- Place on leaf mix.
- Season with cracked black pepper.
- Cut and eat.
