Tuna & Cheese Mayo Sandwich
With red onion on cheese and chive bread. A tasty blend of Deepblue skipjack tuna, grated cheddar and finely diced red onion & chives; bound together with a creamy mayonnaise, topped with chunky slices of cucumber and fresh crispy lollo rosso on cheese and chive bread.

This sandwich was created by Natalie McCreesh from sandwich manufacturer Buckingham Foods, Milton Keynes for the MCM Select Tuna Sandwich Designer of the Year Competition 2005 in which she was a finalist.
Ingredients
- 2 slices cheese and chive bread 16 + 2
- 5g low fat spread
- 100g tuna and cheese mix consisting
- 50g Deepblue tuna
- 20g grated cheddar cheese
- 5g chopped chives
- 5g fine dice red onion
- 20g mayonnaise
- 20g (4 slices) cucumber
- 10g lollo rosso
Method
- Cover one side of each slice of the cheese & chive bread with the low fat spread.
- On the base slice, spread 100g of the tuna & cheese mix.
- Top with the cucumber slices and lollo rosso and finally the second slice of bread.
- Cut and serve.
