Duck & Rhubarb Chutney Sandwich

Shredded duck with a tangy farmhouse Rhubarb chutney, caramelised onions and a crisp mixed leaf.

This sandwich was created by Neil Wilkinson, from The Sandwich Factory at Athestone in Warwickshire as his entry in the Sam Browne Foods Duck Sandwich Designer of the Year Competition 2005 in which he was a finalist.

Ingredients

• Sam Browne Shredded Duck
  
• 16 slice orange bread
  
• Butter
  
• Rhubarb Chutney
  
• Shredded duck
  
• Shredded spring onion
  
• Mixed leaf
  
• Caramelised onion
  

Method

1. Butter bread
2. Spread with chutney
3. Place duck and vegetables on top.
4. Place leaf on top.
5. Cut and serve.
